Authentic Mexican Tacos Al Pastor & Chorizo

Video Recipe available at EATffortlessCooking . Nothing like a cool breezy night were your in the hunt for a midnight snack and all of a sudden you see festive led lights glowing and the glow is coming from a road . This road to the left and to the right of you are a collection of food trucks all serving  freshly made hot off the grill TACOS!! Tacos are LIFE and when I cant get to a food truck I fire up the stove top!

Ingredients needed:
here is all the stuff your going to need...for mexican tacos
1 1/2 lbs of Seasoned Pastor
1 lbs of chorizo
1/3 cup of chopped Cilantro
1 half of onion finely cube
1 pack of preferred tortillas

1.Start with 2 separate skillets add a little oil like a tea spoon just to create a non stick surface this meat will render out fat and alot of it , you want to set the stove to med high.
2.Once the meat is in the pan go ahead and stir occasionally you want to make sure you break down the meat to a ground beef consistency .Once the meat has a nice crip texture turn off an put aside .
3.Rough chop your cilantro and finely dice the onion and put aside.
4.Now with the tortillas  heat up a griddle pan and lightly coat the pan Then throw your tortillas on the pan what the oil does is create a nice crisp tortilla capable enough to with stand any sauce and help not become soggy.
5.Now were are ready to assemble now me personally I like the double tortilla method because I love to stuff my tacos . Now grab 2 tortillas load a NICE serving of the meat , once loaded top off with some of the diced onion an cilantro ADD some a squeeze a line and ENJOY!
