How to make Lomo Saltado - Peruvian Beef

LOMO SALTADO
This is a Peruvian stir fry dish made with seared marinated beef with crispy potatoes in a succulent soy vinegar based sauce . I found this dish is really a hit with kids surprisingly , so if you have picker little eaters this might be the answer to the picky eaters . Ingredients needed for How to make Lomo Saltado
1 1/2 ilbs of flank steak (skirt steak)
2 tbls olive oil
3 tbls of vinegar
4 tbls soy sauce
1/2 tbls salt
1 tbls paprika
1tbls cumin
black pepper to taste 
2 small tomatoes sliced
2 cloves of garlic
2 tbls of cilantro 
2 cups of fries
1/4 red onion sliced

1.Cut your steak into 2-3 inch pieces, after combine the olive oil ,salt,paprika,cumin,garlic,and black pepper to taste in a bowl mix it up and set aside to marinate for 10-15 mins .While you marinate bake or fry your fries until crispy an set aside once done.
2.In a skillet put 3 tbls spoons of vegetable oil and place on high heat once oil is hot place beef bits at a time you dont want to crowd the pan if you do there will be alot of moisture and will not sear the meat properly.you want to cook for 2-3 mins on each side or until nice an seared.
3.Once the meat is almost seared on the other side you want to turn down heat to medium and add your red onions. Cook for about a min or 2 until onions start getting soft .
4.Once onions are soft you want to add your tomatoes and cook for about 1 min
5.Once your tomatoes start to soften you want to add your soy sauce as well as your oil and mix that up and cook for 30 seconds , and then add your fries.
6.Once fries are added turn off heat and mix very well until each french fries is coated let cool down and garnish with the cilantro and serve with white steam rice and ENJOY!
